Menu includes one salad, two mains, one vegetable, one starch, & one dessert.

Rainbow Slaw - Shaved carrots, red cabbage, and kale, with chia seeds and an apple cider vinaigrette (V,P)*

Chicken Tacos - Build-your-own chicken tacos with gluten-free jicama "tortillas", corn tortillas, pico de gallo, spirulina guacamole, & dairy-free cashew "sour cream" (P)

Carnitas Tacos - Build-your-own pork carnitas tacos with gluten-free jicama "tortillas", corn tortillas, pico de gallo, spirulina guacamole, & dairy-free cashew "sour cream" (P)

Black Bean Stuffed Peppers - Tri-color quinoa, warming spices and black beans stuffed in roasted bell peppers and served with our homemade spirulina guacamole (V)

- VEGETABLE -

Skillet Peppers & Onions - Sauteed bell peppers and onions with garlic and olive oil (V, P)

- STARCH -

Rice & Beans - Cilantro lime brown rice with black beans, red onions, roasted poblano peppers, and pumpkin seeds (V)*

- DESSERT -

Mango Crumble - Ripe mango backed with cinnamon and dates, and topped with gluten-free crunchy oats (V)
